Wheat is a very essential source b vitamins and folic acid and it is the staple food of the people of India (particularly Northern India where it is consumed more in comparison to rice).
Refined white flour has a lower gluten content than whole wheat flour because it's nutrient rich source the bran and germ are removed. But by use of Bleaching Agents like ascorbic acid, potassium bromate,chlorine gas, benzoyl peroxide etc in the refining process it's advantage of being low in gluten content is lost reason being the toxicity of these chemicals.
Today a friend here put a question to me - Do you take rotis in your Indian diet which is made of wheat and has gluten in it. I said "yes". Next he asked me whether Indians are as much gluten intolerant as westerners and people in rest of the world. I said "no" to him at that time.
This conversation and my earlier encounters with this term in my never ending search for finding a cure for my condition raised several questions in my mind. Like-
How to know that I am gluten intolerant, are there any tests for it?
or do I need to avoid gluten irrespective of my tolerance to it?

I have had the same question for several months. After my rapid flare up, I have given up gluten, alcohol, eggs, and meat. It has been extremely difficult so far with out chapati and bread :).

Thanks rsblr. Please also tell me about the advice given by the Functional medicine doctor after you meet him. I am also looking for something like this. Functional medicine practitioners in India maybe hard to find especially ones who can understand and look into the cause of autoimmune diseases from the genetics point of view.
